Everyone loves Condiments!


  
We eat them with just about everything! From steaks to sandwiches, there is a condiment for everything! 
You've heard me talk about my bologna and ketchup sandwiches as a child. Oh, the memories just pour out as I type about it now. As, a teen I graduated from bologna and ketchup to tomato and mayonnaise!
And as I got a little older, I learned the marvel of the condiment drawer! I still have a condiment drawer to this day... You never know when you are going to need that one Mcdonald's ketchup packet for your bologna. Ha!
So, here are a few condiments that you can make at home. I will be linking back to this page from some of my other recipes.



Simple Home Made Mayonnaise:

Ingredients:

2 large egg yolks
2 tablespoons water
2 tablespoons lemon juice
1/2 teaspoon salt
Dash white pepper
1 cup olive oil

Directions:
In a double boiler or metal bowl over simmering water, constantly whisk the egg yolks,
 Water and lemon juice until the mixture reaches 160° or is thick enough to coat the back of a spoon.

 While stirring, quickly place the bottom of the pan in a bowl of ice water; continue stirring for 2 minutes or until cooled.
Transfer to a blender. Add salt and pepper. While processing, gradually add oil in a steady stream. Transfer to a small bowl.
 Cover and refrigerate. This can hold about 7 days.

Garlic and Rosemary Aioli:

Ingredients:

1 cup Mayonnaise 
1 tablespoon Garlic, minced
1 tablespoon fresh Rosemary, minced
1 zest of a lemon

Directions:

Mince garlic and rosemary.
Add lemon zest, garlic, and rosemary to 1 cup of mayonnaise.
Blend in a high-speed blender or food processor until smooth.

 

Beast mode BBQ sauce:

Ingredients:

2 cups  Heinz tomato ketchup
1/4 cup brown sugar
1 tablespoon Worchester sauce
1 teaspoon lemon juice
1/4 cup Jack Daniels
1/2 tsp mustard
2 pinches of chili powder
1/2 tsp onion powder
Salt and pepper to taste
1 teaspoon vegetable oil

Directions:
In a medium pot mix all ingredients together and bring to a boil, reduce to a simmer, and stir frequently for 10 minutes.

Rib Rubbin' Rub: (You can rub your chicken with it too)

Ingredients:

5 tablespoon cumin

5 tablespoon paprika

5 tablespoons granulated garlic

5 tablespoon granulated onion

5 tablespoons chili powder

5 tablespoons brown sugar

10 tablespoons kosher salt

1 tablespoon cayenne pepper

1 tablespoon black pepper

1 tablespoon white pepper

Mix all ingredients together and store in a dry place. I like to make extra so I will always have some on hand.
Mustard:

Ingredients:
1/2 cup mustard powder
1/2 cup beer
3 tablespoons apple cider vinegar
2 teaspoons Salt

Mix Mustard powder, salt, and beer together and let sit at room temperature for about 15 minutes.
Add the Apple cider vinegar and stir until incorporated.
Place in refrigerator for 12 to 24 hours (It will thicken up in the refrigerator).
